  • White chocolate chips or chunks = 10 ounces

Method of Preparation:

1. In a large bowl, use an electric mixer to beat the butter until it's creamy. Then add some brown sugar and beat this mixture until well combined. You can beat the corn syrup with vanilla extract.

2. Add the heavy cream in two batches, mixing on low speed until it is just incorporated before adding more; scraping down the sides of the bowl with a rubber spatula as needed. Beat in the semisweet chocolate pieces or chunks at this time too if you haven't already done so when mixing in your two batches of heavy cream like I had told you before this step.

3. Mix in half of the package of white chocolate chips now if you have not done so already as I said earlier in the post.

4. Place plastic wrap over top and refrigerate for four hours or overnight, stirring occasionally until the mixture thickens slightly. Pour the mixture into a freezer-safe container and freeze according to the manufacturer's directions.

5. Serve with fresh mint leaves as a garnish alongside mint ice cream cones.

Instructions For Making Mint Chip Ice Cream:

This recipe is based on the Chocolate Chocolate Chip Fudge Pudding recipe. The only thing I changed was adding a little extra sugar to balance out the flavor of the chocolate chips and substituting peppermint extract for vanilla.

Ingredients:

  • Whole milk = 1 cup
  • Heavy cream = 1 cup
  • Salt = 1/4 teaspoon
  • Sugar = 1/2 cup
  • Molasses = 1 tablespoon
  • Semisweet chocolate = 6 ounces
  • Light corn syrup = 2 tablespoons
  • Butter unsalted = 1 tablespoon
  • Peppermint extract = if required
  • Green food color = two drops

Method of Preparation:

Pour the milk into a saucepan and whisk in the salt and sugar. Scrape any bits from the bottom of your pan before you turn it on to medium heat.

When bubbles form around the edges of the pan but not at its center, remove them from heat. Stir in chopped chocolate until it melts completely, be careful not to let it burn.

Add corn syrup (if using) and whisk vigorously until smooth about 30 seconds more than usual as there will be some lumps from both ingredients as well as from melting them together with such high heat.

Add the butter and stir just until it melts and is incorporated. Remove from heat again, and add the peppermint extract, depending on how much you like mint along with drops of green food coloring if desired. Let it cool in the room before keeping it in the refrigerator. 

The ice cream can also be made without corn syrup, but just know that when you're stirring in the chocolate after cooking everything else your batter might have some lumps that need to be smoothed out with an immersion blender or other handheld mixer. let it cool down and refrigerate for about 3 to 4 hours and enjoy.

You can't go wrong with this classic, no-frills recipe for mint chip ice cream. The only thing better than the taste of this creamy dessert is the way it looks in a dish or in a cone when you're serving it.   • Green food color = few drops (optional)

  • Semi-sweet chocolate chips= 8 ounces
  • Corn syrup = 1 tablespoon

Method of Preparation:

In a medium saucepan over medium heat, add the milk to a simmer. In a bowl, whisk together the eggs and sugar until they are well combined.

Add some of the hot milk to the eggs while whisking constantly to temper them so that they don't cook from direct contact with the hot liquid.

Once mixed, pour back into the saucepan with the remaining hot liquid and continue stirring until thickened.

Add in vanilla extract and stir to combine. Pour mixture into an airtight container and refrigerate for 2 hours until cooled completely before adding any other ingredients.
