Method of Preparation:

To begin, heat oil in a big pot over medium intensity. Add cloves of minced garlic and cook until fragrant, about 30 seconds. Add chopped celery and chopped carrots and cook until softened, about 5 minutes.  Next, add low-sodium chicken broth, water, dried thyme, and dried oregano. Bring to a boil, reduce heat to low, and simmer for 10 minutes.

Add egg noodles and boneless, skinless chicken breasts (cut into small cubes). Simmer for 10 minutes more, or until the chicken is cooked through and the noodles are tender. Finally, stir in chopped fresh parsley and season with salt and pepper.
